5 Easy Midweek Dinners To Get You Through The Week

It's the start of a new week which means it's time to figure out what to cook.

Make dinner time exciting again.

Our food cravings have inspired this list, based on recipes we've been posting on the site lately. The dishes below are ones we know we'll cook again and again, so try them out with us and let us know what you think.

Crispy chicken with chimichurri dip

Think chicken tenders, but make it gourmet. This crispy chicken recipe is so easy to make, but it's the chimichurri dip that's the real winner here. It works really well with halloumi and steak, so double the recipe for the dip and keep it in a sealed container in the fridge for about a week. Get the recipe here

Strawberry, barley and spinach salad

It's been fairly warm outside over the past while, so we've been craving a lot of lighter food like this salad. Even though strawberries will always be our favourite fruit to use, especially since they're at their best right now, this salad also works well with blueberries and raspberries. Try the recipe here

Shepherdless Pie with Lentils

This vegan shepherd pie is the ultimate comfort food. Using lentils instead of meat, this Shepherdless Pie is definitely plant-based comfort food. We definitely recommend adding the walnuts, they add a delicious chewiness. Get the recipe here.

Wild Garlic and Prawn Spaghetti

Wild garlic is in season at the minute, so if you're interested in foraging then now is the time to get going. The combination of wild garlic and prawns works so well here that we'll be making this dish constantly while we can. Try the recipe here.

Pan-Fried Halloumi with Cherry Tomato and Wilted Spinach

Halloumi is one of our favourite cheeses, so we would eat it with nearly anything. This salad is super quick to throw together and tastes great, so it's a really great option for a quick lunch or dinner this week. Get the recipe here
