Your weeknight dinners never looked so good.

The best season of the year is finally here.

Summer gives you permission to stop trying so hard. Resign yourself to drinking (responsibly) all day outside. Read for pleasure. And absolutely do not stress about preparing an elaborate dinner.

These 5 quick and easy summer weeknight dinners, which require minimal effort and time, want very little from you—except maybe to be enjoyed with an ice-cold beer.

Fish Tacos

In our eyes, tacos are always a good option. These fish tacos are super easy to whip up, so they make a delicious quick dinner option. We think this recipe would work really well with prawns or salmon if you don't have white fish to hand. Get the recipe here

Pan-Fried Halloumi with Cherry Tomato and Wilted Spinach

Halloumi is one of our favourite cheeses, so we would eat it with nearly anything. This salad is super quick to throw together and tastes great, so it's a really great option for a quick lunch or dinner this week. Get the recipe here

Chimac's Korean BBQ Chicken

The sauce which accompanies this dish is the real star. It's tasty, but not too spicy and a nice introduction to Korean ingredients for those who might not be so familiar. Brown sugar and apple cider vinegar caramelize beautifully over high heat, but the real magic comes from doenjang, Korea’s answer to miso, and gochugaru, Korean red pepper flakes, which add a gentle but tasty kick. Serve straight from the BBQ with a summer salad of fresh green leaves or for something a little more filling, rice and vegetables. Try the recipe here.

Charcoal Roasted Squash With Harissa And Smoked Hazelnuts

Who said vegetarians can't barbecue? This charcoal roasted squash with harissa and smoked hazelnuts is a great option for any vegetarians out there and it also works great as a side dish too. Get the recipe here.

One-Pan Chicken Parmesan

Chicken Parmesan is a classic dish, but Donal's take on it is a little lighter than its American counterpart. Using courgette noodles instead of pasta, this dish if filling and really easy to pull together. Get the recipe here.
