Ingredients
- 260g flour
- 1 teaspoon baking powder
- 1 pinch salt
- 80ml milk
- 30g melted butter
- 1 egg
- 125g sugar
- 1⁄2 teaspoon vanilla extract
- 1 litre vegetable oil
For the vanilla glaze
- 150g icing sugar
- 1 tablespoon golden syrup
- 1 tablespoon milk
- 1 tablespoon golden syrup
- 1⁄2 teaspoon vanilla
For the chocolate glaze
- 90g chocolate
- 2 tablespoons butter
- 2 tablespoons golden syrup
- Crushed nuts/sprinkles for decoration
For decorating
- Jam/chocolate spread for filling
Method
- Mix flour, baking powder and salt in a bowl. In a separate bowl, combine milk and melted butter.
- In an electric mixer, beat egg, sugar and vanilla until combined. Add in the flour mixture slowly, followed by the milk mixture, until fully combined.
- Place mixture in the fridge for 2–3 hours.
- While your dough is firming, prepare your glazes. For the vanilla glaze, whisk together all the ingredients until smooth, adding more icing sugar or milk to get the desired consistency. For the chocolate glaze, place ingredients in a saucepan and melt over a low heat, stirring until combined.
- Heat oil in a deep-fat fryer or deep wide saucepan to a depth of 7.5cm until very hot (roughly 180C).
- While the oil is heating, prepare your donuts. Roll dough to a thickness of 1cm and use a 4cm cutter to cut out your donuts.
- Now you’re ready to fry, but be very careful. Once the oil is hot, using a metal slotted spoon, lower your donuts into the hot oil and cook for 2-3 minutes, turning once, until golden brown. Place on paper towels when removed to drain off excess oil and allow to cool.
- Make a small hole in the side of each donut and, using a piping bag, fill with the desired filling. Next, dip the filled donut into a glaze and shake to remove the excess. Place on a wire rack and finish by sprinkling nuts or sprinkles on top. When the icing has set, insert paper straws into the donuts.
