5 Easy Weeknight Dinners To Add To Your Rotation

Including an exciting new pasta recipe!

That same pasta dish? For a third successive night? A bit bleak, isn’t it?

Our food cravings have inspired this list, based on recipes we've been posting on the site lately. The dishes below are ones we know we'll cook again and again, so try them out with us and let us know what you think.

Baked rigatoni

In our latest pantry staples guide, we talked about the three foods we think you should have at home right now and dried pasta was right at the top of the list. It's extremely versatile and easy to cook, but if you're buying any right now, make sure to only buy as much as you and your family need – there's absolutely no need to stockpile!

Matty Matheson's baked rigatoni is total comfort food. Even though it requires a little effort to make, the result is well worth it. This recipe serves four people, but could easily be stretched or doubled if you need to feed more. Plus, it's a great freezer-friendly recipe. Don't be alarmed by the variety of ingredients as you can easily adapt it to what you have on-hand. Get the recipe here.

Mini fish pies

Fish pie is another comforting dish that we love to make when we're feeling a little under the weather or when it's freezing outside. This recipe from Brian Walsh is really easy to make and packed with a variety of seafood to ensure that you and your family are supplied with a range of nutrients. Serve with some broccoli or peas and you've got a crowd-pleasing dinner on your hands. Try the recipe here.

Spicy mango coconut tofu bowl

Even though you might be working from home this week, it's important to remember to take your lunch break to enjoy something delicious. This recipe is packed with goodness and lends itself very well to batch cooking. We think it's a great option to have ready in the fridge for the week. Get the recipe here.

Black pudding sausage rolls

Missing your morning sausage roll now that you're stuck working from home? This recipe from Ethna Reynolds of Nook in Sligo calls for ingredients that you probably already have at home, so this is a good one to prep for the week. Try out this sausage roll recipe here

If you're feeling adventurous, you could try to make your own puff pastry to go with it – we have a great recipe here.

Chipotle chicken wings

Gareth Mullins from The Marker Hotel knows a thing or two about flavour, as this chicken wing recipe can easily attest. You might think that making restaurant-quality chicken wings at home is an unattainable task, but this recipe is so simple to replicate and packs a serious punch of flavour. Try it out here.
