Winter is officially here, which means we’re craving quick, comforting dinners that stave off the chill – specifically, satisfying plant-based dishes to add to our repertoire.
Which is why we’ve scoured the blog and cookbook of our favourite vegan influencer, Holly White to pull together a whole host of new vegan dinner ideas.
Having found that the full transition to a plant-based diet intimidates people, White introduces the idea of a gradual move to veganism, such as adding lentils to a casserole instead of meat or swapping to non-dairy milk in your morning latte.

White doesn't just talk the talk, she walks the walk too, with a host of nutrition and food-related qualifications under her belt, including Plant-based Nutrition for Cornell University, so you can be sure that her recommendations are sound.
The book itself includes a host of gorgeous photographs alongside the straight-forward recipes, tempting the reader to try out a few. The ingredients are pretty accessible for the average cook and the processes are definitely do-able, making this book an exciting way to introduce veganism to any newbies.
We especially love Holly's recipes for Shepherdless Pie with Lentils, Matcha and Cinnamon Latte and her gorgeous Caramel and Chocolate Slices. We've included these three fab recipes below for you to try out and enjoy.
Shepherdless Pie with Lentils
This recipe is perfect now that we're coming into the colder months as it's sure to warm you up. Using lentils instead of meat, this Shepherdless Pie is definitely plant-based comfort food. We definitely recommend adding the walnuts, they add a delicious chewiness.
Caramel and Chocolate Slices
These Chocolate and Caramel Slices are so good that you won't even know that they're vegan! With a rich date caramel filling, they're definitely perfect for those with a sweet tooth. We recommend keeping a few in the freezer as back up for when you have vegan friends over for tea- that's if you don't eat the lot as soon as you've made them. Check the recipe here.
Matcha and Cinnamon Latte
With matcha so readily available these days, it's perfect for an early morning health boost instead of your usual coffee. The addition of cinnamon to this latte gives it a delicious spicy hint.
